The Pecorino cheese, although hard, thus absorbs the flavor of the wine during a maturation of 18 months, giving it to the Cheese a unique flavor on the palate, hence the name Drunk Doggy Style. Advice: the best temptation of Drunk Doggy Style is to taste it "naked and raw", but let yourself be surprised by grating it on the pasta; in combination we recommend un cup of Montefalco Rosso DOC or of Amelia Rosso Riserva DOC In this way, during the whole period of aging that took up to 15 months, the pecorino would absorb the wine and thus acquire the unique fruity and sweet flavor that characterizes the PEcorino Drunk.
