The moment I cracked open the VEGAN WHITE, I was struck by its surprisingly low sugar content - 27.1% (the values on the bag I received were slightly off from the photos), which is roughly half that of Willie's dairy white at 37%. Compared to other white chocolates on the market, this one is an impressive 50% less sweet! The lack of dark cacao solids in its composition means the oat flavour plays a stronger role in the flavor profile here. Neither of these factors are necessarily a huge issue - long as you're aware of it. The oat and cocoa butter flavours do work well together, but the absence of sweetness combined with the strong oat profile makes for a noticeably different taste than dairy white chocolate.

This VEGAN WHITE is decidedly vegan in its own right, with much more emphasis on its oat element rather than any artificial or milk-based ingredients. Its dry, pasty mouthfeel may be slightly grainy, but it's not as bad as other oat-based chocolates I've tried. While cooking for gluten-free friends can be a challenge, the use of gluten-free oats makes this chocolate a welcome option.

When I attempted to caramelize this VEGAN WHITE with an overnight 90C sous vide method, my results were satisfactory - it tempered well, but the pasty mouthfeel was much more prominent afterwards. This suggests that the oat base may have cooked out somewhat during this long heat cycle. The low sugar content also limited the development of caramelly flavours.

It's worth noting that I think VEGAN MILK might be a better choice for those looking to turn their white chocolate blonde - its slightly lower sugar content means it won't suffer from the issues that white chocolate often does. However, this VEGAN WHITE is certainly an option in the right hands - I'll probably use these as chocolate chips in cookies to account for the lack of sweetness and oat-forward flavours.

I'm absolutely obsessed with these chocolates, and for good reason - the perfect balance of richness and depth to their flavor profile. What really sets them apart, however, is how well they've managed to neutralize that sweetness that can sometimes get in the way of their overall character.

That being said, I do find myself enjoying them just as much on their own, without any added extras or preservatives. It's almost as if nature has done a remarkable job of preserving this chocolate bar.
