Ammonium bicarbonate: Ammonium bicarbonate is used when a large amount of gas needs to be produced quickly. Ammonium bicarbonate decomposes into water, ammonia and carbon dioxide gas when heated or under acidic conditions. Due to the rapid release, very little ammonia remains in the finished product, and the ammonia smell will not be tasted in the finished product. Since ammonium bicarbonate easily decomposes and releases ammonia (which is where the name of ammonium bicarbonate comes from) and loses its effect, it is difficult to store and is generally rarely used in households.
