Its flavour is complex and evolving, ranging from green, grassy freshness (reflecting the sugarcane itself) through briny sweetness to subtle stewed fruit character. The spirit is made by Leoncio Gaspar, a second-generation sugarcane grower and producer who learned the craft from his father at their family ranch deep in the Sierra Mixe, around four hours northeast of Oaxaca City.
